The first blog of the year is sweet, in hopes that the entire year will stay sweet too. 🙂 I love cute little desserts, so I’ve decided to bake mini cupcakes with a vanilla flavored topping. Because they came out so splendidly I am sharing them with you.
I made the mix following the Rainbow Muffins recipe, because it gives a really light and fluffy sponge. I felt that they would spread and change shape during baking so I gave them some support by using two cupcake molds instead of one. I use the tiny ones, the ones I used in the Coconut Snowballs recipe.
I decided to use a new creamy topping which is supposed to be a bit lighter, airier and not so buttery. The only ingredients are mascarpone, sweetened to taste with powdered sugar and a bit of vanilla. It worked very well, the cream had the perfect texture for decorating the cool cupcakes. Delicious and cute, right? 🙂
