For this very tasty, yet very quick and simple pie you will need:
- 250 g butter
- 300 g flour
- 1 egg
- 1 packet of vanilla sugar
- 1 tea spoon of baking powder
- 100 g sugar
For the filling you can use anything you want, apples, cottage cheese, blueberries, strawberries… Today I decided to put in homegrown strawberries and blueberries and I also added one apple. I mixed everything together and added a big spoon of sugar and a little bit of cinnamon.
The dough is very easy to prepare – you just mix all the ingredients together. I advise you to have butter at room temperature for easier kneading. When you have both the dough and filling ready take your pie tray and spread some butter on it, then sprinkle with ground almonds, hazelnuts or walnuts – whichever you want. This will help the pie not stick to the surface. I like almonds the most, I think they give the best taste. 🙂 Then you lay down the dough and make a little bed for your fruit filling. When you’re done, tuck in the edges to pack it all up nicely. Leave a small amount of dough for later, so you can fashion it into strips and cover the pie- but I usually just grate it into tiny rolls. 🙂
Bake for 45 min at 180°C. Then let it cool down and bon appetit! 🙂
P.S.: For all of you cottage cheese lovers out there (I’m one of them) I’m adding a recipe for cottage cheese filling:
- 2 eggs
- 1 lemon juice
- 500 g cottage cheese
- 250 g sour cream
- 100 g sugar
- 1 vanilla sugar
- 50 g flour
Just mix everything together and spread it on the dough. 🙂
