Easter is coming, and I think it’s one of the cutest holidays of all. Everything is coated in my favorite pastel colors, there’s lots of creative things to do, such as decorating the eggs and baking interesting pastries. This time I’ve tried myself at creating bird’s nest cupcakes.
When I bake any kind of cupcakes which I plan on decorating, I use the following recipe as a base, because it’s truly tasty and creates the best starting point for the topping.
Cupcake recipe:
for 10 cupcakes
- 125 g sugar
- 125 g flour
- 125 g butter
- 2 eggs
- 1/4 teaspoon of baking soda
- 1/4 teaspoon of vanilla bourbon
- 1,5 tablespoons of milk

Creating the nests
Mix the powdered sugar and vanilla into the mascarpone. If you want them to come out dark you can use some cocoa powder, too. Spoon the mix into a piping bag and squeeze out some out, into the shape of a snail shell. To get the nesting branches effect I used some grated chocolate and chocolate sprinkles, and laid some marzipan eggs in the middle.
All the cupcakes I made mysteriously disappeared the same day. Luckily I managed to snap a few photos in time. 🙂
